Elle a de nombreuses chances de se d\u00e9velopper dans l&rsquo;industrie alimentaire.<\/p>\n<p>La dextrine r\u00e9sistante peut \u00eatre obtenue par hydrolyse acide et hydrolyse enzymatique. La m\u00e9thode d&rsquo;hydrolyse acide consiste \u00e0 chauffer l&rsquo;amidon dans des conditions acides pour l&rsquo;hydrolyser partiellement afin de produire de la dextrine r\u00e9sistante, puis \u00e0 neutraliser, filtrer, d\u00e9colorer, concentrer et s\u00e9cher pour obtenir le produit. Le processus est simple mais les d\u00e9chets liquides acides doivent \u00eatre trait\u00e9s.<\/p>\n<p>La m\u00e9thode d&rsquo;hydrolyse enzymatique utilise des enzymes sp\u00e9cifiques pour d\u00e9composer l&rsquo;amidon dans des conditions de temp\u00e9rature et de pH appropri\u00e9es afin de produire de la dextrine r\u00e9sistante, puis \u00e0 neutraliser, filtrer, d\u00e9colorer, concentrer et s\u00e9cher pour obtenir le produit.
